Festive balls and cookies

This recipe makes scrumptious energy balls if left raw or you can roll out the dough and make them into cookies by baking them. I’m not sure which way I prefer them as they are both delicious. I think that these are perfect for the festive season, served on a platter with mulled wine. They would be perfect any time of the year though.

  • 100g Almonds
  • 100g Raisins
  • 50g pumpkin seeds
  • 50g sunflower seeds/sesame seeds
  • 50g Goji berries
  • 50g oats
  • 2 Tbsp maple syrup
  • 2 Tbsp cacao/cocoa powder
  • 1 Tbsp chia seeds mixed with 2 Tbsp water

  • Put all of the ingredients into a food processor and blend until the nuts have broken up and the ingredients  are all combined.
  • Remove the dough and put it in to the fridge for 20-30  minutes.
  • Preheat the oven to 170 degrees celcius (fan oven).
  • Halve the dough and place one half of the dough between two layers of cling film.
  • Roll out the dough and cut out cookies with a cookie cutter and place them on a lined tray.
  • Bake for 10 minutes and them remove from the oven and allow to cool.
  • While the cookies are in the oven, with the other half of the mixture, make small balls, the size of a small Brussel sprout. A damp hand prevents the mixture from sticking to your hands.
  • Place the balls in small cupcake holders if you have them.
  • Once the cookies are cooled, serve as they are or you can drizzle them in dark chocolate.
