Spinach and banana “Incredible Hulk” pancakes

This recipe has saved me from feeling like an awful mother on many days.  I’m talking about those days when your child refuses to eat anything healthy and survives on white carbohydrates for most of the day.  I often offer these pancakes as a “treat” on those days, getting some eggs, a banana and even some greens into my unsuspecting child.

My fussy eater will devour the entire batch himself and I often accompany them with a “fruit” smoothie with added spinach.
The first time I made these I had to drizzle them in maple syrup but I gradually reduced this and now he eats them either alone or with some sliced banana on top.  Protein – check, vegetables – check, healthy oats – check.

These pancakes are perfect for breakfast, lunch, a snack or even dinner.
These pancakes will be green.  I get around this by saying that they are Incredible Hulk pancakes.  Enough said.

If gluten free oats are used then this recipe can be gluten free.


1 egg (I always get free range, organic eggs)

1 banana

1/2 cup oats

1/4 teaspoon baking powder (if you don’t have any, it’s fine, they will work anyway)

2 tablespoons milk

Handful of spinach or other greens (even steamed broccoli or raw kale)

1/2 teaspoon of Coconut oil to fry


  • Blend all of the above ingredients up together (I use my Nutri-ninja)
  • Heat coconut oil in a non stick frying pan and make small pancakes, the size of a regular mug.  This batch should make 6 to 8 pancakes.
  • Flip over until browned on both sides.
  • Serve to your little fussy eater and hope for the best.
